Stainless Steel Zester Grater

A long, flat stainless steel grater with a fine cutting surface, made for the things a box grater mangles: citrus zest, hard cheese, garlic, ginger, nutmeg and chocolate.

The narrow blade is the point. It takes only the coloured outer layer of a lemon and leaves the bitter white pith behind, and it turns a block of parmesan into a light snow instead of waxy shreds. Rest the tip on the board or the edge of a bowl and draw the food along it.

Tap the back of the grater on the board when you finish. Most of the zest is clinging to the underside.
