Bamboo Steamer Basket

A traditional woven bamboo steamer, sold as separate baskets and lids so you can build a stack to suit how you cook. Sit it over a wok or a pan of simmering water and the steam rises through the slatted base.

Bamboo does something metal steamers can't: it absorbs the condensation instead of letting it drip back onto the food. That is why dumplings and bao come out of a bamboo steamer with a dry, tender skin and not a soggy one. Baskets of the same size stack, so two tiers cook over one pan.
