Stainless Steel Flour Sifter

A stainless steel flour sifter in the classic cup shape, worked with a squeeze handle. Fill it, hold it over the bowl with one hand and squeeze: the flour falls through the mesh in a fine, even shower while your other hand is free to hold the bowl or fold the batter.

Sifting does two things a whisk can't. It takes out the lumps that form in a bag of flour or cocoa, and it puts air into the dry ingredients, which is the difference between a light sponge and a dense one. The cup contains the flour, so far less of it ends up on the worktop than with an open sieve.
