Folding Roasting Rack

A V-shaped wire rack that cradles a joint or a whole bird above the roasting tin. Lifted off the base, the meat roasts in hot air on every side, so the underneath browns and crisps instead of stewing in its own juices.

The fat and juices drip through into the tin below, which is exactly where you want them for gravy. The rack is hinged, so the angle adjusts to hold a chicken, a rib of beef or a rack of ribs upright, and it folds flat to fit in a drawer afterwards.
